It is not the fastest dessert, but it is technically possible in a home kitchen if you follow the proportions carefully, stir the mixture continuously, and allow the finished lokum enough time to stabilise its texture.<br /><br />In this article, we will give two detailed recipes: honey Turkish delight and classic sugar-based Turkish delight. The first version has a softer, deeper and less direct sweetness because of the honey. The second is closer to the familiar texture and taste of classic Turkish delight that most people see in confectionery shops.<br /><br />We deliberately publish exact proportions. Many producers prefer not to share recipes and give only approximate values. <strong>At Beyoğlu Lokum &amp; Coffee, we take a different approach: customers should understand what a product contains and how it is made. This matters especially when we talk about sweets loved by children and families.</strong> Ingredient transparency and production responsibility are not marketing phrases for us; they are part of how we think about food.</div><h2  class="t-redactor__h2">Important safety warning</h2><div class="t-redactor__text">Before starting, it is important to understand that making Turkish delight involves very high temperatures. Near the end of cooking, honey lokum may reach around 120°C, while classic sugar-based lokum may reach around 130°C. Hot sugar-starch mass is extremely sticky and can cause serious burns even with brief skin contact.</div><div class="t-redactor__text">Do not make Turkish delight near small children. Use a stable saucepan, a long wooden spoon or spatula, a clear work surface, and a mould prepared in advance. Do not leave the stove during cooking: from the moment the heat is turned on until the saucepan is removed from the stove, the mixture must be stirred continuously.</div><div class="t-redactor__text">We do not recommend wearing thick kitchen gloves while stirring. Steam and heat may make your hand sweat, reducing your control. A long-handled wooden spoon is usually safer because it keeps your hands away from the hot mass and steam.</div><h2  class="t-redactor__h2">Can real Turkish delight be made at home?</h2><div class="t-redactor__text">Yes, it can. However, homemade Turkish delight will differ from professional production. In a production facility, conditions are more stable: controlled recipes, exact temperatures, special cooking equipment, technological discipline, standardised packaging and experience with larger batches. At home, the result depends on your stove, saucepan, altitude, stirring intensity and weighing accuracy.</div><div class="t-redactor__text">The basic technological logic remains the same. Sugar, honey or another sweet component is combined with water. Starch is mixed separately with water to form “starch milk.” The starch suspension is then added to the sweet base. The mass is cooked with constant stirring, acid is added during cooking, and the finished mass is poured into a mould, rested, cut and coated with starch, powdered sugar, coconut, nuts or dried fruit powder.</div><div class="t-redactor__text">Academic and technological studies on lokum describe the same basic system: sugar, starch, water and acid form the foundation of the product, while the final texture depends on starch gelatinisation, sugar concentration, cooking, cooling and resting.</div><h2  class="t-redactor__h2">What to understand before starting</h2><div class="t-redactor__text">Turkish delight should not be cooked casually “by eye” like a simple jam. Here, grams, minutes and continuous stirring matter. If the mass is undercooked, the lokum will collapse after resting and will not hold its shape. If it is overcooked, it may become too dense, hard or rubbery.</div><div class="t-redactor__text">You should also set aside at least two hours without interruption. The active cooking stage takes around 40 minutes, but preparation, pouring, cleaning and later cutting require additional attention. After cooking, Turkish delight must rest for at least 24 hours at room temperature. Do not place it in the refrigerator: sudden cooling and condensation may damage the texture.</div><div class="t-redactor__text">Use kitchen scales. In this recipe, not only the main ingredients but also the acids matter. Citric acid and tartaric acid help control the sugar mass and its technological behaviour. In lokum production, acids are used to help manage sugar inversion and reduce undesirable crystallisation. (Özdin, 2019).</div><h2  class="t-redactor__h2">Recipe 1: Honey Turkish Delight</h2><div class="t-redactor__text">Honey lokum is different from the classic sugar version. It gives a warmer sweetness, a deeper aroma and a more rounded flavour profile. We do not recommend using flavourings or food colouring in this recipe. Honey already has a strong flavour and aroma of its own.</div><h2  class="t-redactor__h2">Ingredients for honey Turkish delight</h2><div class="t-redactor__text">For the lokum mass:</div><div class="t-redactor__text"><ul><li data-list="bullet">900 g honey</li><li data-list="bullet">120 g starch</li><li data-list="bullet">1.5 g citric acid</li><li data-list="bullet">3.5 g tartaric acid</li><li data-list="bullet">800 g water</li></ul></div><div class="t-redactor__text">For filling:</div><div class="t-redactor__text"><ul><li data-list="bullet">250 g pistachios, hazelnuts, almonds or dried fruits</li></ul></div><div class="t-redactor__text">For outer coating:</div><div class="t-redactor__text"><ul><li data-list="bullet">120 g starch</li><li data-list="bullet">50 g powdered sugar</li></ul></div><div class="t-redactor__text">You can replace the starch-powdered sugar coating with finely ground nuts, coconut flakes or crushed dried fruits. For your first attempt, however, the classic starch and powdered sugar mixture is simpler and more reliable.</div><h2  class="t-redactor__h2">How to make honey Turkish delight step by step</h2><div class="t-redactor__text">First, prepare the starch milk. In a wide bowl, mix 120 g starch with 400 g water. Use a hand whisk. At first, starch may feel thick and resistant to mixing, but after a few minutes it will become smoother and milky. Stir for at least 5 minutes so that the starch disperses evenly in the water.</div><div class="t-redactor__text">In a medium saucepan, pour the remaining 400 g water and add 900 g honey. Stir for about 5 minutes so that the honey partially dissolves and combines with the water.</div><div class="t-redactor__text">Then add the starch milk to the saucepan. Turn the heat to high and start timing immediately. From this point until the end of cooking, you must stir without stopping. A long wooden spoon works best.</div><div class="t-redactor__text">During the first 10 minutes, the mixture will heat up, become more uniform and gradually thicken. At the 10th minute, add the citric acid and tartaric acid. Continue stirring.</div><div class="t-redactor__text">Keep the heat high until the 30th minute. The mass will first become a thick beige gel, then slowly darken toward a light caramel colour. If you use a steel saucepan, small caramelised marks may appear at the bottom. This is acceptable as long as there is no strong burnt smell.</div><div class="t-redactor__text">At the 32nd minute, reduce the heat by about half and add the prepared nuts or dried fruits. Continue stirring so that the filling is distributed evenly.</div><div class="t-redactor__text">At the 37th minute, turn off the heat. At this stage, the mass will be extremely hot, around 120°C. Act carefully.</div><div class="t-redactor__text">While the mass rests briefly in the saucepan, prepare the mould. A glass baking dish is convenient. Line it with baking paper so that the paper covers both the bottom and the sides. Pour the hot mass onto the paper and level the surface gently.</div><div class="t-redactor__text">After this, leave the Turkish delight to rest for at least 24 hours at room temperature. It should stand in a dry place with normal air circulation. Do not cover it airtight before it stabilises fully, and do not place it in the refrigerator.</div><h2  class="t-redactor__h2">How to know whether honey Turkish delight is ready</h2><div class="t-redactor__text">After 24 hours, check the texture. Press the surface firmly with your finger. If the pressed area sinks slightly and then returns, the texture is close to correct.</div><div class="t-redactor__text">If the dent remains and the mass does not recover, the lokum was undercooked. You can add nuts, fruit ingredients, natural flavourings or food colouring.</div><h2  class="t-redactor__h2">Ingredients for classic sugar-based Turkish delight</h2><div class="t-redactor__text">For the lokum mass:</div><div class="t-redactor__text"><ul><li data-list="bullet">700 g granulated sugar</li><li data-list="bullet">120 g starch</li><li data-list="bullet">1.5 g citric acid</li><li data-list="bullet">3.5 g tartaric acid</li><li data-list="bullet">825 g water</li></ul></div><div class="t-redactor__text">For filling:</div><div class="t-redactor__text"><ul><li data-list="bullet">250 g pistachios, hazelnuts, almonds or dried fruits</li></ul></div><div class="t-redactor__text">For outer coating:</div><div class="t-redactor__text"><ul><li data-list="bullet">120 g starch</li><li data-list="bullet">50 g powdered sugar</li></ul></div><div class="t-redactor__text">You may add flavouring and food colouring if desired. For this quantity, we recommend not exceeding approximately 0.3 g food colouring and 1.5 g flavouring. Start with smaller amounts: excessive flavouring can quickly make the product taste artificial.</div><h2  class="t-redactor__h2">How to make classic Turkish delight step by step</h2><div class="t-redactor__text">As in the first recipe, start with starch milk. Mix 120 g starch with 400 g water in a wide bowl. Whisk for at least 5 minutes until the mixture becomes smooth and milky.</div><div class="t-redactor__text">In a saucepan, pour the remaining water and add 700 g sugar. Stir for about 5 minutes. When the sugar partially dissolves, add the starch milk.</div><div class="t-redactor__text">Turn the heat to high and start timing. From this moment, the mass must be stirred continuously. During the first 10 minutes, the mixture will heat and thicken.</div><div class="t-redactor__text">At the 10th minute, add citric acid and tartaric acid. Continue stirring on high heat until the 30th minute. The mass will first become thick and beige, then gradually turn light yellow.</div><div class="t-redactor__text">At the 32nd minute, reduce the heat by about half and add the nuts or dried fruits. If you are using flavouring or colouring, add them carefully closer to the final stage so that the taste and colour are not damaged by long heating.</div><div class="t-redactor__text">At the 37th minute, turn off the heat. The mass may be around 130°C. It is extremely hot and sticky, so do not touch it with your hands.</div><div class="t-redactor__text">Transfer the mass into a mould lined with baking paper, level it, and leave it for at least 24 hours at room temperature. Do not refrigerate it.</div><h2  class="t-redactor__h2">How to know whether classic Turkish delight is ready</h2><div class="t-redactor__text">After 24 hours, check the texture in the same way as with the honey version. Proper lokum should press down and recover. If it collapses and the indentation remains, it was undercooked. If it barely reacts to pressure, it was overcooked.</div><div class="t-redactor__text">Classic sugar-based Turkish delight usually gives a more familiar density and sweetness than honey lokum. But the quality principle is the same: softness, elasticity and shape stability.</div><h2  class="t-redactor__h2">Why Turkish delight must rest for 24 hours</h2><div class="t-redactor__text">Resting is not a formality. During rest, the mass cools, the internal structure stabilises, moisture distributes more evenly, and the starch gel develops its final texture. Technological descriptions of lokum production also emphasise resting before cutting: after cooking, the mass is left to stabilise, then cut and coated with starch, powdered sugar or another coating (Özdin, 2019).</div><div class="t-redactor__text">If you cut Turkish delight too early, the mass will be sticky, unstable and difficult to shape. If you let it rest properly, cutting becomes much easier and the pieces look cleaner.</div><h2  class="t-redactor__h2">How to cut and coat Turkish delight</h2><div class="t-redactor__text">Mix starch and powdered sugar for the outer coating. Sprinkle about one tablespoon of this mixture over the surface of the lokum and distribute it by hand over the exposed surface.</div><div class="t-redactor__text">Then turn the slab over so that the coated side rests on the work surface. To remove the baking paper, lightly moisten the paper with warm water. The paper will soften and begin to separate from the lokum mass. Do this carefully without pouring water onto the product.</div><div class="t-redactor__text">After removing the paper, the surface may be sticky. This is normal. Apply the starch-powdered sugar mixture to that surface. Once coated, it will become easier to handle.</div><div class="t-redactor__text">With a sharp knife, cut the lokum into cubes of the desired size. Coat each piece with the starch and powdered sugar mixture so that the pieces do not stick together. You may also use ground nuts, coconut flakes or dried fruit powder.</div><h2  class="t-redactor__h2">Common mistakes when making Turkish delight at home</h2><div class="t-redactor__text"><strong>The most common mistake is insufficient stirring. </strong>The lokum mass must remain in motion; otherwise, starch may distribute unevenly and the bottom may burn.</div><div class="t-redactor__text"><strong>The second mistake is removing the mass from the heat too early. </strong>Undercooked Turkish delight may look ready while hot, but after resting it collapses and does not hold its shape.</div><div class="t-redactor__text"><strong>The third mistake is overcooking. </strong>If the mass stays too long on the heat, the product becomes too dense, loses tenderness and may develop a rubbery texture.</div><div class="t-redactor__text"><strong>The fourth mistake is refrigeration. </strong>Homemade Turkish delight does not need sudden cooling. Refrigeration may cause condensation and damage the surface.</div><div class="t-redactor__text"><strong>The fifth mistake is excessive flavouring or colouring. </strong>Turkish delight should have a clean taste. Too much flavouring makes it feel artificial.</div><h2  class="t-redactor__h2">How to store homemade Turkish delight</h2><div class="t-redactor__text">Store homemade Turkish delight in a closed container, in a dry place, away from direct sunlight and heat sources. Humidity and temperature strongly affect texture: under high humidity, lokum may become sticky and excessively soft; when it loses moisture, it may become harder.</div><div class="t-redactor__text">If lokum is made at home, its shelf life depends on hygiene, added ingredients, packaging and storage conditions. Nuts, dried fruits and natural additions may change how the product behaves. Even if the product looks stable, regularly check its appearance, smell, surface and texture.</div><div class="t-redactor__text">In a well-closed container, in a dry and cool place, homemade Turkish delight can keep for a considerable time. However, a homemade product is not the same as industrially controlled production. If you notice foreign odours, mould, excessive surface moisture or a sharp change in taste, do not consume it.</div><h2  class="t-redactor__h2">How homemade lokum differs from professional production</h2><div class="t-redactor__text">Homemade Turkish delight is a good learning experience. It helps you understand how complex this product actually is. The ingredient list seems short: sugar or honey, starch, water and acid. But the final quality depends on many details: heating strength, stirring, saucepan type, altitude, cooking time, air humidity and resting after pouring.</div><div class="t-redactor__text">Professional Turkish delight differs in stability. In good production practice, recipe, temperature, texture, packaging, hygiene and batch repeatability are controlled. Unlike classical plain lokum, which may appear translucent, cream-coloured or fruit-coloured depending on its recipe, Sultan Lokum is known for its soft white appearance, light mouthfeel and elastic structure. At first glance, many people assume that this whiteness comes from coconut, powdered sugar, milk, starch coating or artificial colouring. In traditional production, however, the real explanation is more technical and more interesting: Sultan Lokum is white because of whipped soapwort root extract and the saponins naturally present in it.</div><div class="t-redactor__text">The short answer is this: Sultan Lokum becomes white because soapwort extract is whipped into a stable white foam and then incorporated into the sugar-starch lokum mass. This foam introduces countless tiny air bubbles into the confectionery structure. These air bubbles scatter light, make the mass look opaque and white, increase volume and contribute to the characteristic soft elasticity of Sultan Lokum. In other words, the white colour is not simply a surface decoration; it is the visible result of a controlled food-technology process.</div><h2  class="t-redactor__h2">What Is Sultan Lokum?</h2><div class="t-redactor__text">Sultan Lokum is not merely “ordinary Turkish delight covered in something white.” In Turkish food-technology literature, it is treated as a specific type of lokum. According to the definition cited in studies on Turkish delight, Sultan Lokum is obtained by mixing a sugar syrup whitened with soapwort extract into the plain lokum mass (Ogun, 2019). This is an important distinction: the white identity of Sultan Lokum comes from the internal structure of the product, not from a white external coating.</div><div class="t-redactor__text">Classical lokum is usually produced from sugar, water, starch and acid, and then may be flavoured with rose, lemon, orange, mint, pomegranate, nuts or other ingredients. Sultan Lokum differs because its technology includes a foaming stage. Soapwort extract is beaten until it forms a light, stable foam, which is then introduced into the lokum base. This step changes not only colour, but also volume, structure and the way the product feels in the mouth.</div><div class="t-redactor__text">This is why Sultan Lokum often appears more delicate, softer and more “ceremonial” than ordinary lokum. It has a visual purity that makes pistachios, hazelnuts, fruit pieces, rose petals or cream fillings look more expressive. Yet its value is not only visual. Its whiteness is linked directly to texture.</div><h2  class="t-redactor__h2">Soapwort Extract: A Traditional Functional Ingredient</h2><div class="t-redactor__text"><a href="https://beyoglu.ru/soapwort-extract">Soapwort extract is obtained from the roots of plants belonging to the Gypsophila genus. In Turkey, this ingredient is widely known as çöven, çöven suyu or çöven extract. The roots are extracted with hot water, producing a liquid rich in natural surface-active compounds known as saponins.</a> In Turkish confectionery, soapwort extract has traditionally been used in products such as Sultan Lokum, Paşa Lokumu, tahini halva and nougat-like sweets, especially where a stable white foam, increased volume and controlled texture are desired (Çam, 2010; Kablan, 2023).</div><div class="t-redactor__text">From a food-engineering perspective, soapwort extract is a functional ingredient. It is not mainly used for taste. Its role is technological: it helps whiten the mass, produces foam, improves volume, contributes to structure and, in some systems, behaves like an emulsifying agent (Çam, 2010; Kablan, 2023). This is why dissertations on the subject examine soapwort extract not as a simple flavouring material, but as a structure-forming component.</div><div class="t-redactor__text">Çam (2010) studied soapwort extract, soapwort concentrate and soapwort powder for use in Turkish delight and halva production. The study found that soapwort concentrate and soapwort powder could be used in these products without causing a statistically significant negative effect on the visible colour of the lokum samples. This point is important for modern production because it shows that the technological effect of soapwort can be maintained not only in traditional liquid extract, but also in more controlled forms such as concentrate or powder.</div><h2  class="t-redactor__h2">Why Foam Makes Sultan Lokum White</h2><div class="t-redactor__text">The whiteness of Sultan Lokum does not come from soapwort extract acting as a white pigment. The mechanism is physical as much as chemical. When soapwort extract is whipped, saponins help trap air in the form of fine bubbles. These bubbles become dispersed within the sugar-starch mass. As light enters the structure, it is reflected and scattered by the many interfaces between air and syrup-gel matrix. The result is a more opaque, matte and white appearance.</div><div class="t-redactor__text">A similar principle can be seen in other foods. Egg white, meringue, whipped cream and aerated sugar masses become visually lighter not simply because of their ingredients, but because air is incorporated into the structure. A transparent or semi-transparent material becomes opaque when it contains many tiny bubbles. In simple terms, one part of the molecule interacts with water, while another part interacts more readily with less polar phases. Because of this structure, saponins reduce surface tension and help stabilise air bubbles in aqueous systems. Kablan (2023) describes soapwort extract as a material that can be transformed into a permanent white foam by high-speed mixing and notes that it is used in tahini halva, Sultan/Paşa Lokumu and nougat to bleach the product colour, act as an emulsifier, improve structure and increase volume.</div><div class="t-redactor__text">This explains why soapwort extract has such a specific place in Turkish confectionery. It is not ordinary plant juice. It is a traditional extract with a measurable technological function. The foam it creates is responsible for part of the visual identity and sensory character of Sultan Lokum.</div><div class="t-redactor__text">It is also important to clarify a common misunderstanding. Soapwort extract is not household soap and it is not a chemical bleach. It is a traditional plant extract used in controlled food-production contexts. Its whitening effect is not a bleaching reaction in the industrial chemical sense. It comes primarily from foam formation, air incorporation and light scattering.v</div><h2  class="t-redactor__h2">Why Sultan Lokum Is Not Only White, but Also Elastic</h2><div class="t-redactor__text">A good Sultan Lokum is not merely white. It should also be soft, elastic and stable. Dirik (2009), in experiments involving pomegranate Sultan Lokum, notes that Sultan Lokum has a whiter colour and a more elastic structure compared with plain lokum. This observation is technologically meaningful. The air incorporated through soapwort foam changes the internal architecture of the product. The mass becomes lighter, less dense and more flexible.</div><div class="t-redactor__text">The texture of lokum depends on several factors: sugar concentration, starch gelatinisation, water content, acidity, cooking time, cooling and storage conditions. In Sultan Lokum, an additional factor is introduced: the foam system formed by soapwort extract. This system gives the product a more delicate, cushion-like structure. It reduces the impression of heaviness and supports the elastic bite that consumers often associate with high-quality Sultan Lokum.</div><div class="t-redactor__text">However, this structure must be controlled carefully. If the mass is undercooked, it may become sticky or unstable. If it is overheated, it may develop a yellowish shade and heavier caramel notes. If the foam is weak, the product may look pale but lack true lightness. If moisture is not controlled, the surface may become wet, sticky or dull. Therefore, the whiteness of Sultan Lokum is not a superficial sign; it is linked to production discipline.</div><h2  class="t-redactor__h2">The Role of Cooking, Sugar and Starch</h2><div class="t-redactor__text">Although soapwort extract explains the specific whiteness of Sultan Lokom, the base mass is equally important. Lokum is built on a cooked sugar-starch system. Starch gives body, sugar gives sweetness and glassy structure, water controls softness, and acid influences the cooking process and final texture. If this base is not prepared correctly, soapwort foam cannot compensate for the defect.</div><div class="t-redactor__text">A well-made Sultan Lokum requires a balanced sugar-starch matrix that can hold the foam without collapsing. The base must be cooked enough to develop structure, but not so much that it darkens or becomes tough. It must retain enough moisture to remain soft, but not so much that it becomes sticky or loses shape. This is why the white colour of Sultan Lokum should always be evaluated together with elasticity, surface condition and mouthfeel.</div><div class="t-redactor__text">Kadak (2024) treats lokum quality as a combination of measurable and sensory parameters, including moisture, sugar, starch, pH, appearance, taste, smell and elasticity. This approach is useful for understanding Sultan Lokum as well. A product can be white and still be poor if it is rubbery, watery, overly sticky or dull in flavour. True quality comes from the relationship between colour, structure and sensory balance.</div><h2  class="t-redactor__h2">Why Some White Lokum Looks Yellowish</h2><div class="t-redactor__text">Not every Sultan Lokum has the same shade of white. Some samples are bright white, while others are cream-coloured or slightly yellowish. A very pale cream tone may be normal, depending on the sugar, starch, cooking conditions and the form of soapwort extract used. But a strong yellow shade may indicate excessive heating, prolonged cooking, raw-material variation or storage-related changes.</div><div class="t-redactor__text">The colour also depends on the type and quality of soapwort preparation. Çam (2010) examined soapwort extract, soapwort concentrate and soapwort powder, measuring visible colour values and evaluating their performance in Sultan Lokum and halva. In that study, correctly prepared soapwort-derived materials did not create statistically significant differences in visible colour when compared with commercial soapwort extract in lokum samples. This suggests that the production method of the extract can be modernised, but must remain controlled.</div><div class="t-redactor__text">If fruit purées, nut pastes, natural colourants or spices are added, the final product may no longer remain purely white. This is not necessarily a defect. In many premium products, the white Sultan Lokum base is used as a visual background for pistachio, pomegranate, rose, hazelnut or cream fillings. The key is that the base should remain clean, stable and consistent.</div><h2  class="t-redactor__h2">Is White Colour a Sign of Quality?</h2><div class="t-redactor__text">White colour is an important sign of Sultan Lokum identity, but it is not enough by itself. A high-quality Sultan Lokum should be white or softly matte, but also elastic, clean in aroma, stable in shape, pleasant in sweetness and free from raw starch odour. If the product is white but too sticky, wet, rubbery or fragile, the technology is not balanced.</div><div class="t-redactor__text">This is especially important for consumers. A product can be made to look white from the outside by coating it with coconut, starch or powdered sugar. But this does not make it true Sultan Lokum. The defining feature is the internal foam-based technology created with soapwort extract. External coating changes the surface. Soapwort foam changes the mass itself.</div><div class="t-redactor__text">For producers, the difference is even more important. Sultan Lokum requires accurate control of foaming, mixing, cooking, cooling and storage. Its softer structure makes the eating experience more delicate.</div><h2  class="t-redactor__h2">Conclusion</h2><div class="t-redactor__text">Sultan Lokum is white because of a traditional but scientifically explainable process. Soapwort root extract, rich in saponins, is whipped into a stable white foam. This foam introduces fine air bubbles into the sugar-starch lokum mass. It is a centuries-old method of preparation, a material culture, and a ritual of hospitality shaped by Yemen, the Ottoman world, the cezve, foam, grounds, water and Turkish delight.</blockquote><div class="t-redactor__text">Today, the phrase “Turkish coffee” often brings to mind a practical question: how to make Turkish coffee in a cezve, how to create a thick foam, why the coffee is served with water, and why Turkish delight so often appears beside the cup. Yet behind this apparently simple culinary question lies a deeper historical process. Turkish coffee is not merely a drink made from ground coffee beans. It is a method of preparation, a material culture, a form of hospitality and a social ritual that has carried meanings of respect, conversation and memory for centuries.</div><div class="t-redactor__text">The emergence of Turkish coffee cannot be reduced to one date, one inventor or one location. If the subject is the coffee plant, the story points toward East Africa and the wider Red Sea region. If the subject is coffee as a social drink, Yemen and the Arabian Peninsula become central. If the subject is the beverage known today as Turkish coffee, then the decisive historical setting is the Ottoman world: the palace, the urban coffeehouse, the cezve, the small cup, the ritual of serving water and the slow social rhythm around the drink.</div><div class="t-redactor__text">For this reason, it is more accurate to describe Turkish coffee not as a sudden invention, but as a long transformation. Coffee beans travelled across geography, trade and belief systems. They moved from Yemen to Ottoman lands, from courtly and religious circles to coffeehouses, and from public venues into domestic life. Over time, a distinctive form appeared: very finely ground coffee, cooked together with water, served unfiltered with foam and grounds in a small cup.</div><h3  class="t-redactor__h3">From Yemen to the Ottoman World</h3><div class="t-redactor__text">The early history of coffee is closely linked with Yemen. In Yemeni and broader Arabian settings, coffee gradually became more than a plant product or stimulant. It was associated with wakefulness, night gatherings, religious circles and sustained conversation. Several studies on coffee culture underline the role of Sufi communities in the early spread of coffee, especially because the drink helped maintain alertness during long sessions of worship, recitation and communal reflection (Dalan, 2007; Erdem, 2025).</div><div class="t-redactor__text">At this stage, coffee was already socially powerful. It gathered people together, extended conversation and created a new pattern of sociability. For that reason, it also produced suspicion. Some praised coffee as a useful drink that helped attention and devotion. Others considered it morally dangerous because it encouraged gatherings, speech, leisure and political talk. This tension would later continue in the Ottoman Empire, where coffee became deeply loved but also periodically questioned, restricted or banned.</div><div class="t-redactor__text">Coffee entered Ottoman life in the sixteenth century. Later narratives often connect its introduction with Özdemir Pasha, the Ottoman governor of Yemen, who is said to have brought coffee to the court during the reign of Sultan Süleyman. Such accounts are culturally important, but they should be treated carefully. Academic history must distinguish between memory, legend and documented process. It is safer to say that by the sixteenth century coffee had become known in Ottoman courtly, scholarly and urban circles, and that its spread accelerated in large imperial centres such as Istanbul (Dalan, 2007).</div><div class="t-redactor__text">At first, coffee was not necessarily a drink of the entire population. It circulated among elites, religious groups, merchants and educated urban communities. Yet its social character allowed it to move quickly beyond narrow circles. Coffee required not only beans and fire, but also people. From the beginning of its Ottoman history, it was closely tied to conversation.</div><h3  class="t-redactor__h3">The Coffeehouse as an Ottoman Urban Institution</h3><div class="t-redactor__text">The rise of coffee in the Ottoman Empire cannot be understood only through the kitchen. It must also be understood through the city. Coffeehouses became places where men met, listened to stories, exchanged news, played games, discussed public affairs and observed urban life. In this sense, coffee helped create a new kind of social space between the home, the market, the mosque and the workplace.</div><div class="t-redactor__text">The first well-known Istanbul coffeehouses are usually associated with the mid-sixteenth century. The exact chronology may be debated, but the social pattern is clear: coffee rapidly became part of urban public life. A coffeehouse was not simply a commercial venue where a hot drink was served. It was a space of speech. For this reason, Ottoman authorities sometimes looked at coffeehouses with suspicion. They were places where people of different occupations gathered, where rumours spread, where jokes were told, where news circulated and where opinions could form.</div><div class="t-redactor__text">Turkish coffee as a cultural practice grew within this world. It was linked with waiting, conversation, observation and social presence. Unlike the modern idea of fast takeaway coffee, Ottoman coffee required time. It was prepared slowly, served carefully and consumed in small sips. The pause around the cup was part of the meaning of the drink.</div><div class="t-redactor__text">This is one of the reasons why Turkish coffee survived as a cultural sign rather than merely a beverage. It was not only consumed; it was performed. The act of preparation, the order of serving, the small cup, the foam, the water and the sweet accompaniment all became part of a recognizable cultural grammar.</div><h3  class="t-redactor__h3">Why Early Ottoman Coffee Was Not Yet Exactly Today’s Turkish Coffee</h3><div class="t-redactor__text">In everyday language, one often hears that Turkish coffee appeared in the Ottoman Empire in the sixteenth century. This statement is partly true but historically incomplete. Coffee certainly entered Ottoman life in the sixteenth century. However, recent research in the material culture of coffee suggests that the specific beverage now called Turkish coffee took shape more gradually (Erdem, 2025).</div><div class="t-redactor__text">The modern form of Turkish coffee has three essential features: very fine grinding, preparation together with the grounds and serving with foam in a small cup. The drink is not filtered. The coffee grounds remain in the cup, settle at the bottom and become part of the sensory and cultural experience. Yet in the earlier Ottoman period, other forms of coffee were also known. Studies of Ottoman coffee objects indicate that drinks made from coffee husks, as well as clearer and stronger coffee prepared in larger vessels, coexisted with later forms (Erdem, 2025).</div><div class="t-redactor__text">The key issue is material culture. The vessel matters. A larger ewer is better suited to preparing a strong, clearer coffee without grounds. A small, open, handle-bearing cezve, by contrast, allows finely ground coffee and water to be heated together in a controlled way, producing foam and preserving the grounds. Therefore, the history of Turkish coffee is also the history of its utensils. When the vessel changed, the drink changed with it.</div><div class="t-redactor__text">Erdem’s research argues that Turkish coffee in the present sense — a foamy, unfiltered drink served with grounds — came into use especially in the second half of the eighteenth century, even though coffee itself had been present in Ottoman lands much earlier (Erdem, 2025). This does not weaken the Ottoman roots of Turkish coffee. On the contrary, it makes them more precise. The sixteenth century marks the entry of coffee into Ottoman life; the later development of the cezve-based method marks the emergence of the beverage that is now internationally recognized as Turkish coffee.</div><h3  class="t-redactor__h3">The Cezve, Foam and Grounds: How an Object Shaped a Taste</h3><div class="t-redactor__text">A recipe for Turkish coffee cannot be separated from the cezve. In many languages, the vessel is sometimes called an ibrik, although in Turkish usage the correct term for the small coffee pot is cezve. It has a long handle, a relatively broad base and a narrower upper part. This form helps control heat and foam. It allows the coffee to rise slowly without aggressive boiling.</div><div class="t-redactor__text">This is why the question “how to make Turkish coffee in a cezve” is not merely practical. It is historical. The cezve is not an accessory added after the recipe was formed; it is one of the objects that made the recipe possible.</div><div class="t-redactor__text">Turkish coffee is not boiled in the manner of a soup. It is slowly heated until the foam rises. Water, very finely ground coffee and, if desired, sugar are combined before heating. The cezve is then placed over low heat. As the temperature rises, the surface darkens and foam begins to form. The drink should not be violently boiled. When the foam rises, the cezve is removed from the heat and the coffee is carefully poured into small cups. The grounds are allowed to settle before drinking.</div><div class="t-redactor__text">This method separates Turkish coffee from filtered coffee. Filtered coffee removes the solid particles. Turkish coffee preserves them. The result is a dense body, a long aromatic finish and a final layer of grounds that remains at the bottom of the cup. It is commonly served with water and a small sweet element, most characteristically lokum, or Turkish delight. In contemporary cafés, chocolate, sherbet, marzipan, almond sweets and regional fruit-based confections may also appear. From a scientific point of view, these accompaniments perform sensory functions. Water prepares the palate, while lokum modifies bitterness and extends the aftertaste. The question is therefore not only “Which roast is best for Turkish coffee?” but also “Which Turkish delight composition works with which roast profile?”</div><div class="t-redactor__text">This article examines Turkish coffee roasts and Turkish delight pairings through food chemistry, sensory analysis and serving culture. The aim is to provide a serious but practical framework for consumers, cafés, gourmet retailers and producers who want to serve Turkish coffee with more precision.</div><h3  class="t-redactor__h3">Why Roast Profile Matters in Turkish Coffee</h3><div class="t-redactor__text">Roasting is one of the decisive transformations in coffee production. Green coffee beans contain carbohydrates, amino acids, lipids, chlorogenic acids and many precursor compounds, but the characteristic aroma of coffee appears largely through thermal reactions during roasting. Maillard reactions, caramelization, Strecker degradation and pyrolytic changes produce volatile compounds responsible for roasted, nutty, smoky, spicy, floral, fruity and bitter notes.</div><div class="t-redactor__text">In Turkish coffee, these changes become especially visible because of the preparation method. The coffee is ground very finely and cooked with water in a cezve or Turkish coffee machine. It is not filtered. As a result, the cup carries not only dissolved compounds but also suspended fine particles and aromatic oils. The drink is dense, textural and persistent. It means that, for Turkish coffee, medium roast may preserve a more balanced aromatic profile, while dark roast can intensify bitterness, roasted sharpness and smoky perception. For pairing with lokum, that distinction is crucial.</div><h3  class="t-redactor__h3">Medium Roast Turkish Coffee: Aromatic Balance and Pairing Flexibility</h3><div class="t-redactor__text">Medium-roasted Turkish coffee is generally the most versatile profile for traditional service. It preserves more aromatic complexity while still providing recognizable roasted coffee character. In sensory terms, medium roast often gives better balance between roasted notes, light acidity, sweetness perception and coffee aroma.</div><div class="t-redactor__text">Because Turkish coffee is already concentrated, a medium roast does not need aggressive sweetness beside it. The role of lokum is not to cover the coffee but to modulate it. For this reason, delicate Turkish delight compositions work especially well with medium-roasted coffee.</div><div class="t-redactor__text">Plain rose lokum, pistachio lokum, almond lokum, lightly citrus-flavoured lokum and pomegranate-floral lokum can all pair effectively with a medium roast. Rose gives aromatic continuity without excessive heaviness. Pistachio introduces fat, protein and a roasted-green nut profile that resonates with pyrazine-derived nutty notes in coffee. Almond softens the aftertaste and gives a clean marzipan-like association. Pomegranate or barberry-style sour-sweet compositions add acidity and make the coffee feel brighter.</div><div class="t-redactor__text">For medium roast, the best Turkish delight composition is usually moderate in sweetness, aromatic rather than heavy, and texturally clean. A lokum that is too sugary or too heavily coated can flatten the coffee’s aromatic complexity. A balanced lokum should leave space for the coffee’s roast aroma to remain perceptible after the sweet is consumed.</div><h3  class="t-redactor__h3">Dark Roast Turkish Coffee: Bitterness, Smoke and the Need for Counterbalance</h3><div class="t-redactor__text">Dark-roasted Turkish coffee produces a more forceful cup. As roast temperature and intensity increase, acidity and some volatile aromatic nuances may decrease, while bitterness, smoky notes and roasted intensity become more dominant. In Turkish coffee, where the drink is dense and unfiltered, these attributes can be attractive to consumers who prefer a strong cup, but they can also become tiring if the accompaniment is poorly chosen.</div><div class="t-redactor__text">The pairing logic for dark roast is different from medium roast. Dark roast needs either sweetness to counter bitterness, fat to soften rough edges, or acidity to refresh the palate. Simple sugary sweetness can work, but it may produce a short and one-dimensional effect. A dark roast served with pistachio-pomegranate or almond-citrus lokum can feel deliberate and gastronomically complete.</div><h3  class="t-redactor__h3">Light Roast and Turkish Coffee: A More Difficult Case</h3><div class="t-redactor__text">Light roast is often celebrated in modern specialty coffee because it preserves origin characteristics, acidity and floral or fruity notes. In Turkish coffee, however, light roast is more complex. The fine grind and cooking method can emphasize raw, cereal-like or sharp acidic impressions if the roast is not developed enough. Turkish coffee also relies culturally on foam, density and a recognizable roasted aroma. A too-light roast may therefore appear unfamiliar to traditional consumers.</div><div class="t-redactor__text">This does not mean that light roast cannot be used. It means that it requires careful selection of bean, roast development and pairing. If a light or light-medium roast is used for Turkish coffee, the best lokum pairings are usually floral, citrus, bergamot, rose, mastic or delicate nut compositions. Heavy chocolate or caramel lokum can dominate the cup and make the coffee seem thin by comparison.</div><div class="t-redactor__text">For a light roast, the purpose of lokum is not to suppress acidity but to frame it. Rose-pistachio, lemon-almond, bergamot-lokum or lightly pomegranate-flavoured lokum can create a more coherent sensory field. Bean origin, roast development, grind size, cooking time, water quality and sugar level in the coffee all influence the final result. A medium roast from one origin may behave like a darker roast from another if it has strong roasted bitterness. A sweetened coffee may need a less sweet lokum. A plain coffee can support a more expressive sweet.</div><h3  class="t-redactor__h3">Sugar in the Coffee or Sugar Beside the Coffee?</h3><div class="t-redactor__text">One important distinction in Turkish coffee service is whether sweetness is integrated into the coffee or served beside it. Turkish coffee can be prepared plain, medium-sweet or sweet. When sugar is cooked together with coffee, sweetness becomes part of the beverage body. When lokum is served beside plain coffee, sweetness remains external and sequential.</div><div class="t-redactor__text">From a sensory perspective, the second method gives the consumer more control. The most refined service usually treats lokum as a calibrated accompaniment, not as a decorative afterthought.</div><h3  class="t-redactor__h3">Water, Foam and Sequence</h3><div class="t-redactor__text">The classic service of Turkish coffee includes water for good reason. Water cleanses the palate before coffee and can also refresh the mouth between sips. In traditional interpretations, the order of drinking water and coffee also carries social meaning, but in sensory terms its function is direct: it reduces interference from previous foods and prepares the tongue and nose for coffee aroma.</div><div class="t-redactor__text">Foam is another important sign of quality. Foam traps aroma, affects first visual perception and gives the cup a sense of freshness. A coffee served without foam may still contain caffeine and flavor, but it loses part of the expected Turkish coffee identity. For pairing, foam also matters because it influences the first sip. A dense, foamy coffee with a small piece of lokum creates a different mouthfeel from a flat, overboiled coffee served with a large sweet.</div><div class="t-redactor__text">The ideal sequence is controlled: water first, then the first sip of coffee, then a small piece of lokum, followed by slow coffee consumption. When the lokum is nut-rich or sour-sweet, it should not be too large. The aim is not to replace dessert but to support the cup.</div><h3  class="t-redactor__h3">Practical Recommendations for Cafés and Gourmet Retailers</h3><div class="t-redactor__text">Cafés and retailers can use roast-lokum pairing as a way to improve Turkish coffee service. Instead of serving the same lokum with every cup, they can create pairing menus.</div><div class="t-redactor__text">A “classic balance” menu could include medium-roasted Turkish coffee with rose-pistachio lokum and water. A “deep roast” menu could include dark-roasted Turkish coffee with pomegranate-pistachio or barberry-pistachio lokum. A “delicate cup” menu could include light-medium roast coffee with bergamot or almond lokum. A “dessert-style” menu could include medium-dark coffee with cocoa-hazelnut or chocolate-accented lokum.</div><div class="t-redactor__text">For premium presentation, portion control is essential. One or two small pieces of lokum are usually enough. Large portions can make the coffee secondary. The lokum should be fresh, not dried at the surface, and not so heavily powdered that it leaves a dusty sensation before coffee. Texture must be elastic and clean. Yet this pairing should not be treated as a fixed cliché. Roast degree, aroma chemistry, bitterness, sweetness, acidity, nut content, texture and serving sequence all determine whether the experience feels balanced or ordinary.</div><div class="t-redactor__text">Medium-roasted Turkish coffee is generally the most versatile and often the most balanced for traditional service. Dark roast requires more careful counterbalancing through nut-rich or sour-sweet lokum. Light roast can be used, but it needs delicate floral or citrus compositions. Water remains essential, not merely ceremonial, because it prepares and refreshes the palate.</div><div class="t-redactor__text">The most successful Turkish coffee service is therefore both cultural and technical. It respects tradition, but it also understands the chemistry of taste.
