Where academic discipline meets the living craft of Turkish confectionery

Beyoğlu Lokum & Coffee is an Ankara-based artisan producer of Turkish delight, tahini halva, tahini, cocoa-butter nut creams and carefully developed gift assortments. The brand grew from the personal journey of Dr. Oğuz Şahbaz: from political science and diplomacy to recipe development, production and the craft of Turkish sweets.

The founder’s story

The story of Dr. Oğuz Şahbaz

Beyoğlu is not a generic confectionery label. It is a personal project built through research, experimentation, direct production experience and a long-standing relationship with Turkish culinary culture.

Before becoming a confectionery producer, I followed an academic path in political science and diplomacy. My doctoral training at the Diplomatic Academy of the Ministry of Foreign Affairs of the Russian Federation taught me to approach complex questions through research, evidence, comparison and patient analysis.

At the same time, Turkish culinary culture had always occupied a more personal place in my life. I was interested not only in how Turkish delight, halva and coffee tasted, but also in what made them work: the transformation of sugar and starch during cooking, the structure of tahini halva, the influence of nuts and fats on texture, and the role these foods play in hospitality, memory and gift-giving.

What began as curiosity gradually became practice. The first experiments were made in a home kitchen. I tested recipes, cooking temperatures, ingredient proportions and finishing points. Some batches worked; others did not. Each result became part of a longer process of understanding how traditional products behave and how they can be made more consistently without losing their character.

Beyoğlu grew from those experiments. The transition from academia to confectionery was not a rejection of my earlier life. It was a continuation of the same discipline in another field. Research became recipe development. Process analysis became production control. Academic patience became the patience required to cook, refine and repeat a difficult product until its texture was right.

From a home kitchen to Ankara

A brand built through practice, not through a ready-made concept

The geography changed as the brand evolved, but the founder-led production logic remained the same.

First experiments

Learning through small batches

Beyoğlu began with recipe trials, direct observation and a desire to understand Turkish confectionery from the inside. Texture, temperature, ingredient behaviour and finishing points were learned through repeated production rather than abstract theory.

Early customers

From personal experimentation to a structured product range

Family members, friends and early customers in Türkiye and Moscow helped turn experiments into products. Feedback led to documented recipes, clearer product formats and packaging designed for retail, gifting and professional supply.

Moscow chapter

An international audience

Moscow became an important chapter in Beyoğlu’s history. It was where the brand reached a broader international audience and began working with individual customers, cafés, retailers and professional buyers.

Today

Production based in Ankara

Today, Beyoğlu produces in Ankara. The move brought the brand closer to its culinary origins, ingredient supply and long-term production goals, while creating a stronger base for Türkiye, Russia and Europe.

Cocoa-butter nut creams

We do not use palm oil or palm-derived fats in our nut creams. Cocoa butter is used where structure is required.

Manual quality control

Critical cooking, texture, shaping, portioning, assembly and packing stages are checked manually.

I continue to work directly on recipe development, production planning, equipment, ingredient decisions, product positioning, packaging and the way Beyoğlu communicates with its customers. The scale may grow, markets may change and the product range may expand, but the central commitment remains the same: to make Turkish sweets with care, clarity and a genuine understanding of the craft behind them.
