Can Turkish delight be developed as an endurance energy chew?
Yes. A starch-set Turkish delight can be adapted into a compact carbohydrate confection for runners, cyclists and other endurance-sport applications, but it should not be treated as a simple flavour change to a standard lokum recipe.

Carbohydrate concentration, starch structure, moisture, sodium, acidity, flavour, colouring, coating, piece size and packaging all influence whether the final product remains stable, cuttable, portable and pleasant to eat during exercise.

For sports-nutrition brands, this makes Turkish delight an interesting product-development platform: it is already a soft, carbohydrate-dense, starch-set confection, yet it can be engineered around a specific sensory and nutritional brief.

Why Turkish delight is relevant to endurance nutrition


Endurance athletes need practical ways to consume carbohydrate during prolonged exercise. Sports-nutrition guidance commonly places carbohydrate intake during exercise in the range of roughly 30–60 g per hour for events lasting around one to 2.5 hours, with higher intakes, often up to about 90 g per hour, used in longer events depending on the athlete, carbohydrate system and gastrointestinal tolerance.

That requirement has created a large market for gels, drinks, bars, gummies and energy chews. Each format solves the same basic problem differently: how to provide portable carbohydrate in a form that an athlete can carry, portion and tolerate.

A starch-set jelly has several characteristics that make it worth exploring. It can be cut into small pieces, portioned accurately, produced in bulk, flavoured in many ways and adjusted from softer to firmer textures. It also offers a different eating experience from a gel, which may be attractive to athletes who prefer a chewable product.

Traditional Turkish delight is not designed as a sports-nutrition product. The relevant question is whether its starch-set technology can become the basis of a purpose-designed endurance confection. In many cases, the answer is yes.

The formulation challenge: sugar, starch and texture must stay in balance


Lokum is sometimes described too simply as sugar, starch and water. In practice, the final product is created by the interaction of starch gelatinisation, sugar concentration, acidity, cooking time, moisture reduction and sucrose inversion.
This matters when a sports brand asks for “more carbohydrate than normal.”

Increasing sugar is not infinitely scalable. At some point, a formulation can become excessively sticky, difficult to cut, difficult to coat and unstable in handling or packaging. A formula that looks attractive on a nutrition spreadsheet may therefore perform badly on the production table.

For custom development, we prefer to work backwards from the target serving. A buyer should define the desired carbohydrate per piece or per serving, the intended number of pieces per hour, preferred piece weight and target texture. We can then assess whether the required carbohydrate density is compatible with the intended starch-set structure.

For small cubes, our current development work treats approximately 70% sugar in the formulation as a practical upper working area, rather than a universal legal limit. The exact usable level depends on the full recipe and process.

Why sodium requires more careful formulation


Sodium is another common requirement in endurance products. It is also a more technically sensitive ingredient in a traditional starch-set confection.

Athletes lose sodium in sweat, but sweat rate and sweat sodium concentration vary substantially between individuals and conditions. For this reason, a serious sports-nutrition brand should specify its sodium target in measurable terms, such as milligrams per piece, per serving or per 100 g, rather than simply asking for a “salty” product.

From a confectionery perspective, adding a meaningful amount of salt directly into a starch-and-sugar gel can change taste, water behaviour and texture. The effect must be tested rather than assumed.

There is also a product-identity question. Turkish food legislation defines lokum through particular product characteristics and composition rules. If a functional formulation departs materially from the conventional definition, it may be more appropriate in some markets to describe it as a starch-set energy confection, energy chew or lokum-inspired sports confection rather than present it as ordinary traditional lokum.

Final classification and labelling should always be checked for the market in which the product will be sold.

A two-component solution: tart-cherry lokum with a sodium-enriched centre

One of the more interesting development routes is to separate the structural function of the lokum from the nutritional function of the added filling.

Instead of forcing all of the sodium and additional carbohydrate into the outer starch gel, the product can be designed as a two-component cube.

The outer component can be a tart-cherry-flavoured, naturally coloured starch-set lokum. Natural colouring foodstuffs such as black carrot or red beet can be evaluated according to the desired shade, acidity and flavour system.

Inside that cube, a smaller filling can carry a more concentrated carbohydrate-and-sodium profile.
A particularly suitable concept is an Italian-style salted caramel centre. The caramel can be processed to a smooth or firmer consistency and can also be combined with almond or peanut, depending on the brand’s nutritional brief, allergen strategy and desired texture.

This creates a visually and functionally distinct product: tart fruit on the outside, a richer salted centre inside, and a clear difference in texture between the two components.

Almond may provide a more premium flavour direction, while peanut can create a familiar sports-snack profile. Both should be evaluated against allergen management, fat content and the target market. The filling should remain small enough that the product still behaves primarily as a starch-set chew.

Why tart cherry is an attractive flavour direction

Tart cherry is a logical flavour for a sports-oriented confection because it delivers acidity and a strong fruit identity without relying on the very sweet flavour profile associated with many traditional confections.

From a product-development standpoint, acidity is useful because an endurance chew with a high carbohydrate load can quickly become cloying. A sharper fruit profile helps create contrast.

The objective should not be to make unsupported performance claims around the flavour itself. The commercial value is more straightforward: tart cherry is recognisable, distinctive and compatible with a deep red natural colour palette.

Black carrot and red beet are both potential natural-colour approaches, but colour performance should be evaluated in the actual recipe because pH, heat treatment and ingredient interactions can affect the final appearance.

Does an energy lokum need a coating?


Usually, yes.

A starch-set confection needs a practical strategy to prevent pieces from sticking to each other and to packaging.

Traditional options include powdered sugar or starch-based dusting. For a custom product, other possibilities can be explored, including cocoa or processed nuts, depending on the formula and nutritional positioning.

A sports product, however, has different handling requirements from a gift-box confection. The coating must be evaluated for what happens inside a pouch, during transport and potentially in warm conditions. Excess loose powder may be undesirable for a runner or cyclist opening a package while moving.

Coating is therefore part of the product engineering, not merely decoration. Piece geometry matters for the same reason: dimensions change surface area, coating level and chewing time.

Private-label development should start with a specification, not a catalogue


Many buyers searching for a private label Turkish delight manufacturer assume that private label means choosing an existing flavour, changing the package and adding a logo.

That model works for standard retail products, but it is not enough for functional food development.
A serious custom specification should define at least the nutritional target, serving size, piece weight, flavour, colouring policy, texture, coating, allergens, packaging format, target market, expected order volume and target commercial price.

For an endurance product, we would also ask how the brand expects the athlete to use it.
Is one piece intended every 15 minutes? Is a serving intended to provide 20 g, 30 g or another amount of carbohydrate? Is sodium expected to come only from the chew, or will the athlete also use an electrolyte drink? Is the product designed for running, cycling, ultra-endurance or general outdoor use?
These questions affect formulation.

A manufacturer cannot responsibly optimise a product if the only specification is “high sugar and high sodium.”

Small-batch trials reduce development risk


For start-ups and emerging sports-nutrition brands, committing immediately to several hundred kilograms of an untested formula is unnecessary risk.

Small pilot runs allow the brand and manufacturer to test the things that are difficult to predict on paper: flavour intensity, sweetness, salt perception, chewiness, stickiness, coating performance, filling ratio, piece size and real-world handling.

For formulations that do not require unusual ingredients or special sourcing, production of an agreed trial recipe can normally be completed within about seven days after the formulation is confirmed.

A pilot is for learning. Once accepted, the recipe can be locked, specifications documented, packaging developed and commercial pricing calculated.

What information should a sports-nutrition brand send to a manufacturer?


The fastest way to begin a custom energy-chew project is to send a measurable brief.
We recommend including:

  • target carbohydrate per 100 g and per serving;
  • target sodium per 100 g and per serving;
  • preferred serving weight;
  • preferred piece weight or dimensions;
  • intended number of pieces per serving;
  • flavour direction;
  • natural-colour requirements;
  • preferred texture;
  • acceptable or prohibited allergens;
  • bulk or retail packaging requirement;
  • intended sales market;
  • expected first commercial order;
  • estimated monthly or annual volume;
  • target purchase price.
This information allows the manufacturer to separate technical requirements from preferences and identify where compromises may be necessary.

For example, a buyer may discover that its target carbohydrate load can be achieved, but only with a softer texture than originally requested. Or the desired sodium level may be better placed in a centre filling rather than the outer starch gel.

That is exactly what pilot development is intended to resolve.

Clean-label formulation and ingredient policy


Our own product-development philosophy is conservative about unnecessary ingredients.
Beyoğlu’s standard approach avoids synthetic colours, glucose syrup and intentionally GM ingredients. We prefer traditional processing and recognisable ingredient systems wherever the target product allows it.

Traditional processing and technical product development are not opposites.

A marble melanger, for example, allows us to develop smooth nut, caramel and compound fillings for a starch-set outer layer. Natural colouring foodstuffs can be evaluated instead of synthetic colour systems.

The objective is to use the minimum technical complexity required to achieve the product brief.

Bulk supply, retail packing and scaling after the trial


A development batch does not have to begin with finished retail packaging.

For early testing, bulk and unpackaged supply can be more efficient. The customer can evaluate flavour, texture, nutritional targets and athlete feedback before investing in printed packaging.

Once the formula is accepted, the project can move to the commercial phase. That may include retail pouch development, portion planning, label content, nutritional analysis, shelf-life validation, export documentation and repeat-production planning.

A realistic volume forecast also helps the manufacturer design the process and quote commercial production more accurately.

Can a Turkish delight manufacturer develop products outside its existing catalogue?


Yes—provided the manufacturer has a genuine product-development process.

There is an important distinction between custom flavour and custom formulation.

Custom flavour changes aroma, colour or inclusions; custom formulation changes the structure or nutritional design to meet a supplied specification. The second requires more work, but creates significantly more value.
